今日は「揚げ出し豆腐」の作り方をご紹介します。居酒屋の定番おつまみの1つで、人気の高いメニュー。サクッとした衣と豆腐のやわらかさに、だしが絡むとたまらないおいしさになります。家でつくれば揚げたての極上のおいしさが味わえる一方、自分でつくるにはなかなか難しい料理でもあります。

よくある失敗は「豆腐が崩れてしまう」または「豆腐から衣がはがれてしまう」というもの。お店のフライヤーであれば豆腐が油につかっている状態をつくりやすく、崩れたり、衣がはがれたりするリスクを減らせますが、たくさんの油を使いづらい家庭では難しい手法です。

一般的なレシピではその解決策として崩れやすい絹ごし豆腐ではなく、もめん豆腐を使う場合もありますが、絹ごし豆腐のなめらかさは捨てがたいもの。そこで今回は絹ごし豆腐を使って上手に揚げるコツを伝授します。

教えてくれたのは料理研究家の吉田愛さん。リーズナブルな鶏手羽元を使った、さっぱりとした味わいの煮物です。酢の効果で肉が柔らかくなり、まろやかな酸味で後を引くおいしさです。

鶏手羽元 6本(約300g) 2個 ねぎ 1本(約100g)

大さじ2 しょうゆ 大さじ2 大さじ2 150cc 砂糖 大さじ1.5 しょうが薄切り 3~4枚

作り方【調理時間:25分】

  1. 鶏手羽元は、骨に沿って切り目を1本入れる。
  2. ねぎはよく洗い、青い部分も含めて4cm長さに切る。
  3. 卵は、冷たい状態から7分30秒間ゆでたら冷水にとり、冷めたら殻をむく。
  4. フライパンに<A>を入れ、強めの中火にかけて煮立たせる。鶏手羽元とねぎを加え、再び煮立ったら、ふたをして弱めの中火で約15分間煮る。途中で一度、手羽元の上下を返す。
  5. ふたを開けてゆで卵を加えたら、強めの中火にし、煮汁をまわしかけながら煮る。
  6. 汁気が少なくなってきたら火を止める。
  7. ゆで卵は半分に切り、鶏手羽元と共に器に盛りつければ完成です。
